Welcome to The Wild Loaf, where everything is made by hand, with love, and a touch of wild magic. We are a microbakery based in Medford (Long Island), and we’re all about creating baked goods that make you smile — whether it's a fresh loaf of sourdough, a gooey chocolate chip cookie, or one of our seasonal pastries.

We don’t rush our dough, and we don’t rush life. Our sourdough is slow-fermented, our cookies are baked to perfection, and every pastry is made with simple, quality ingredients. The result? Delicious, feel-good treats that are made just for you.

The Wild Loaf is more than just a bakery — it’s a way of living. I believe in slowing down, enjoying the simple moments, and finding joy in the little things (like that first bite of warm bread). Every loaf I bake is a reflection of the passion and care we put into everything we do.

Meet your baker, Nicole.

Hi, I’m Nicole! Nature-lover, dog mom, yogi, Swiftie, dreamer, and do-er. I was born and raised on Long Island, NY. I moved to Florida after college, and then to San Diego, California at the end of 2020. Life brought me back to Florida… and then back to Long Island again!

Along the way, I’ve been many people, and met many people. My brand is inspired by each person and place that has made it’s mark on the wild journey. Sourdough has taught me to slow down and reflect on life: what has your experience been so far, and where do you want to take it?

I want to give back and build in the communities that have helped build and shape me into the person I am today. Starting with my homebase, Boca Raton, Florida I was able to establish and scale my business. Now, I get to bring this sourdough magic right back to my hometown of Medford, New York!

The Wild Loaf started from a joyful hobby, that captured the attention and excitement from the local community, and has continued to grow exponentially ever since. I’m extremely grateful for all of the kindness and support along the way.
